Rice with pepper and zucchini

We start the weekend by preparing a simple recipe: rice with pepper and zucchini. At home we eat rice every week and we like to vary its accompaniment. Sometimes we are guided by our tastes, others by what we have in the fridge or pantry. Be that as it may, and thanks to the versatility of rice, the result is always worth it.

In this case we have used three ingredients as a side dish: onion, zucchini and bell pepper. The latter, however, appears in two different ways. On the one hand we have incorporated raw red pepper to the preparation; for another roasted peppers in strips. Do you dare to prepare it?

To do it you will only need to have all the ingredients on hand and have 30 minutes. As I usually advise you, making a double portion is a way to streamline work the rest of the week. You can try it today and reserve some portions for Monday as an accompaniment to some chicken breasts, for example.

Ingredients
  • 1 cup of rice
  • Extra virgin olive oil
  • 1 chopped onion
  • 1 red bell pepper, minced
  • 1 small zucchini, diced
  • Some roasted peppers in strips
  • 1 teaspoon tomato
  • Black pepper
  • Sal Island

Preparation
  1. We put cook the rice in plenty of salted water in a saucepan for the time recommended by the manufacturer. Afterwards, we cool under cold water and drain. We booked.
  2. Meanwhile, in a large frying pan, heat a drizzle of olive oil. When it's hot sauté the onion with the pepper for 10 minutes.
  3. Then add the zucchini and fry at medium temperature until tender.
  4. Then, add the roasted peppers and the tomato and mix.
  5. We incorporate the rice that we have reserved and we flatten it slightly to compact it. Cook over medium high heat for 4 minutes and then stir it to repeat the same operation. The idea is that some grains take on a crunchier texture.
  6. We serve hot.
