This rice with cherrys is simple, it only requires preparing a fried onion and pepper before adding the rice. And the cherry tomatoes that are incorporated at the same time so that they are very tender but whole. You can cook it with vegetable or chicken broth or even with water! Now, the taste will not be the same of course.

I personally like this rice to be a little soupy, hence it has incorporated three times the rice volume of water. Why? Because when you add the cheese it becomes very creamy and does not dry out too much. But for taste! You can play with the amount of broth to get the desired texture.

Ingredients
  • 3 tablespoons of oil
  • 1 white onion
  • 2 green peppers
  • ½ red pepper
  • 1 cup of rice
  • 3 cups chicken broth
  • 1 tablespoon double concentrated tomato
  • ½ teaspoon turmeric
  • ½ teaspoon sweet paprika
  • 2 dozen cherry
  • Salt and pepper
  • Grated cheese

Preparation
  1. Chop the onion and peppers and sauté for 10 minutes in a casserole.
  2. Then we incorporate the rice and fry for a minute.
  3. We pour the hot broth, all the condiments and the cherrys and mix well.
  4. We cook the rice covered over medium-high heat for 6 minutes.
  5. Then we mix again we lower the fire and continue cooking the rice for 10 more minutes or until it is done.
  6. When this is done, remove it from the heat, cover with a cloth and we let it rest one minute.
  7. At that time and before covering the casserole with a cloth, you can add the cheese and mix. Me, I prefer that each one puts a little of grated cheese on the plate, serve the hot rice over it and mix it lightly. Because not everyone might like cheese and because if there is leftover rice I prefer to keep it in the fridge without the cheese.
