I like these types of recipes a lot. Not only because they are delicious but also because they are easy and quick to prepare. One of those that you can adapt to the ingredients you have in the fridge at all times. Are you ready to cook these rice noodles with tenderloin, carrot sticks and mushrooms?
These noodles are a complete and healthy proposal. And it is that in addition to the rice noodles, a significant amount of vegetables, some mushrooms and a bit of meat are incorporated into the dish in this pork loin. You can prepare it with chicken or replace this protein with another of vegetable origin and you will have a different dish.
This recipe can be served as lunch or dinner by adapting the quantities. It is, therefore, very useful. It is one of those that I always prepare double the amount because that way we can enjoy it two days in a row at different times. Can take her in a tupper to work too! It will suffice to heat it to enjoy it.
The recipe
- 180 g of rice noodles
- 1 white onion
- 2 cloves of garlic
- 1 green pepper
- ½ red pepper
- Carrots 3
- 200 g. mushroom
- 2 pork loin steaks
- 2 tablespoons of soy
- Olive oil
- Black pepper
- Chop the onion and pepper and cut the peppers and the peeled carrot into sticks.
- Then we cook the noodles of rice. To do this, boil water in a saucepan and once done, turn off the heat, add the noodles and let them cook in the hot water for the minutes indicated by the manufacturer, generally between 4 and 8. Once done, we refresh and drain.
- While the noodles are cooking dice the meat and brown it in a large frying pan with a little oil.
- Once done, we remove the meat and sauté the onion and garlic chopped for 5 minutes.
- Then add the pepper and carrot sticks. I like to leave them al dente so I cooked them for 4 minutes, no more.
- Then we add the mushrooms and we gild them.
- Finally, we add the meat to the pan, the noodles, soy sauce, a pinch of black pepper and cook for a couple of minutes while stirring.
- We enjoyed the tenderloin rice noodles, carrot sticks and hot mushrooms.
