Ingredients
- 400 grams of rice
- 500 grams of chicken giblets
- 1 small onion
- 3 cloves of garlic
- 1 green pepper
- 2 Bay leaves
- Saffron
- Sal Island
- Olive oil
- White wine
- Water
Preparation
- In a pot, we will add enough olive oil to cover the entire base. We will put it to heat and meanwhile, we will clean and cut our vegetables: pepper, garlic and onion. We will cut the pepper into two or three pieces, the garlic into two or three pieces each, and the very small onion into small cubes. In this way, the onion will be almost imperceptible on the plate and the garlic and pepper will be easy to remove once we plate it.
- When everything is alright stir fried, we will add the two sheets of laurel well washed and the saffron or food coloring. Stir well and add the chicken giblets. We let it do for a few 10 minutes and we give it a couple of turns so that it does not stick.
- Then we add a splash of white wine or cooking wine, letting the alcohol evaporate. The next thing will be to take the rice and water to cover it. About a liter of water more or less.
- We let do slow fire and we are adding salt and water as necessary. Set aside when the rice is to your liking.
