Today I will present you something special, a tasty pudding with vegetables ideal to eat as a family and thus receive the applause of the entire table.
Ingredients: (for 4 servings)
- 240 grams of rice
- 1 sprig of aromatic herbs (parsley, rosemary, oregano, etc)
- 100 grams of steamed and chopped spinach leaves
- 2 diced tomatoes
- 1 finely grated carrot
- Homemade gluten-free mayonnaise or spreadable cheese
Preparation:
In a saucepan with water and salt bring the rice to a boil. Add the aromatic herbs and when the rice is cooked, drain it and cool it under running cold water.
Take the rice and separate it into 3 equal parts and then add the spinach, tomatoes and carrots to each part. Also, add mayonnaise or cheese.
Lubricate a mold for puddings and place the layers of rice in an interleaved way, put in the fridge for 3 hours, after that period, unmold and serve.
