There are dishes like these red beans with vegetables and chorizo that are essential during the winter on my table. When you've had a long, tiring, cold morning with wet feet, such a dish is comforting and satisfying.
And you don't need to plan it. Today the canned cooked legumes They allow us to prepare dishes like this quickly, in just 15 minutes. I always have a jar in my pantry, that way, I just have to take care of preparing the vegetable sauce and incorporating the chorizo. Do you dare to prepare it?
- 1 pot of cooked red beans (Gutarra 560g,)
- 1 garlic clove
- ½ onion
- 1 fine leek (white part)
- ½ green pepper
- 1 Carrot
- 2 pieces of chorizo
- ½ teaspoon sweet paprika
- 1 tablespoon of homemade tomato sauce
- Olive oil
- Pepper
- 1 chilli from Ibarra (optional)
- We wash, peel when necessary and we chop all the vegetables, except garlic (I put it whole). I do it with the mincer so that they are very small and then they are not noticeable.
- We put 2-3 tablespoons of oil in a saucepan and sauté the onion and the leek a couple of minutes. Next, add the garlic, the peppers and the carrot and fry the whole for 8 more minutes so that the flavors mix well.
- Add the chorizo and we cook a couple of minutes so that the fat begins to release.
- Then add the paprika and we stir. Next, we add the tomato.
- We pour the beans with their juice and stir well. Cook the whole for 10 minutes so that the flavors are integrated and take temperature.
- We add a little black pepper and just before serving, a few chillies from Ibarra chopped.
