An empanada is one of those recipes that can made from virtually any ingredient, even with the leftovers you find in the fridge and pantry. It is a perfect dish to prepare in a few minutes and make sure that everyone will like it.

With this simple recipe, you can prepare a tasty empanada for an impromptu dinner. But you can also prepare this dish well in advance, since when it is richer it is when puff pastry has cooled down completely. Once you try this tuna patty, you will surely repeat.

Ingredients
  • 2 sheets of puff pastry
  • 3 cans of natural tuna
  • 1 cup tomato sauce
  • ½ onion
  • ½ green pepper
  • 1 egg
  • extra virgin olive oil
  • shawl

Preparation
  1. If the puff pastry is frozen, first we will have to spread the sheets well. With the countertop very clean and dry, sprinkle flour and place the puff pastry
  2. With the help of a kitchen roller, we stretch the puff pastry until we obtain a rectangle with the measurement of the baking tray that you are going to use. Make sure it is not too thin.
  3. Now we are going to prepare the filling, we cut the onion into small pieces and we do the same with the green pepper.
  4. Add a little olive oil to a frying pan and fry the vegetables over medium heat, until they are tender.
  5. Meanwhile, we open the tuna cans and drain well with the help of a strainer.
  6. Add the tuna to the vegetables with the pan removed from the heat.
  7. Now we put the tomato sauce to taste and mix well, reserve and let it temper.
  8. While we are preparing the next layer of puff pastry, we stretch as we did with the base.
  9. We place on top making sure that the edges coincide well.
  10. With a sharp knife, we cut the remaining puff pastry from all sides.
  11. Now we have to roll the edges so that the empanada does not open, gently pinch the puff pastry, bringing the bottom layer up.
  12. So that the puff pastry is tightly closed, place a few strips of the excess puff pastry over the entire edge of the pie, giving it a little shape by rolling it with your fingers.
  13. We prick the puff pastry with a fork so that the air can enter.
  14. Finally, we beat the egg and with the help of a kitchen brush we paint the entire puff pastry, including the edges.
  15. Put in the preheated oven at 200ºC for 20 minutes or until you see that the puff pastry is golden.

Notes
The baking time will depend on the power of your oven, the indicated time is an estimate. The empanada is ready when the puff pastry is golden brown, since the filling is already cooked.
