Bacon and mushroom quiche

Bacon and mushroom quiche, a variant of the traditional quiche of French cuisine, a tart with a lot of flavor.

Quiché is a savory cake, with a base of puff pastry or shortcrust pastry, the base of the filling is eggs, cream or milk and to this we add meats or vegetables. All a delight !!!

Ingredients
  • Shortbread or puff pastry
  • 100 gr. bacon
  • 300 gr. of mushrooms
  • 4 eggs
  • 250 ml. cream for cooking
  • 100 ml. milk
  • 150 gr. grated cheese, enmental, Parmesan….
  • Buy

Preparation
  1. We line a mold with the broken dough, if it is removable better, we cut the rest of the mold, put some chickpeas on top so that it does not rise and put it in the oven for 10-12 minutes, remove the chickpeas and reserve.
  2. We prepare the filling, clean and cut the mushrooms into thin slices, put them in a pan with a little oil, cut the bacon into strips and when the mushrooms are ready, add it and sauté together, turn off.
  3. In a bowl we mix the eggs, cream and milk, beat everything well, add a little salt and pepper.
  4. To the mixture we add the mushrooms and the bacon, we stir and we put half of the grated cheese, we mix everything very well.
  5. Pour all the filling over the dough, distribute all the mixture well over the dough and sprinkle the rest of the grated cheese all over the cake.
  6. We put the cake in the oven at 180º for about 20-25 minutes or until it is curdled and golden, we unmold it carefully, we let the cake rest for 5 minutes.
  7. Ready to eat!!!
  8. For the filling we can add what we like the most: onion, chicken leek ...
  9. We can eat it hot or cold, it is just as good.
