Putanesca pasta

Ingredients
  • 250 gr of tomato. {I have used a can of preserves}
  • 1 large tablespoon of capers.
  • 1 garlic clove
  • 1 sprig of fresh parsley
  • 2-3 tablespoons olive oil
  • 1 large dehydrated chilli
  • 1 small can of canned anchovies
  • Parmesan cheese powder

Preparation
  1. Cut the tomatoes into small cubes and reserve.
  2. We desalinate the anchovies under a stream of cold water and let them dry on kitchen paper.
  3. We chop them together with the capers and garlic.
  4. In a pan with 3 tablespoons of hot olive oil, add the minced garlic, the anchovies, the minced chilli (be careful with rubbing your eyes afterwards),
  5. We stir and let "fry" for a few minutes until we notice that the anchovies begin to fall apart.
  6. Add the chopped capers and cook for about a minute and a half.
  7. We cook the pasta with which we want to accompany this wonderful sauce.
  8. Add the tomato and half of the chopped fresh parsley and stir the whole, letting it cook over low-medium heat for about 13-15 minutes. Stir occasionally.
  9. After plating, we add powdered Parmesan.
