If you like to have a sweet snack at home to accompany your coffee, you have to try this pumpkin coke. A sweet that with that orange color fits perfectly with the Halloween theme that seems to flood everything this weekend, a bridge for many.
This is, without a doubt, one of the pumpkin desserts that I have enjoyed the most lately. The key is in its simplicity and sweetness, and despite the fact that the pumpkin is already sweet on its own, this dessert don't skimp on sugar. It is not a proposal for every day, of course, but it is worth it to treat yourself to a sweet treat.
This pumpkin coca can be dressed in many ways. Could you add chocolate chips to the dough or divide the dough in two once prepared and add cocoa to one of the parts to create a marbled pumpkin and cocoa coca. You can be as creative as you want or know how.
The recipe
- 3 eggs
- 150 g. of sugar
- 120g mild olive oil
- 250g roasted pumpkin puree
- 250 g. Of flour
- 10 g. chemical yeast
- A pinch of salt.
- Sugar and ground cinnamon for dusting
- We preheat the oven to 180ºC.
- We beat the eggs with the sugar with some electric rods until they double their volume and whiten.
- Now, add the oil little by little without stopping stirring.
- Then We integrate the pumpkin puree.
- And finally we incorporate the sifted flour mixed with a pinch of salt and chemical yeast.
- We pour the dough on a fountain (20×28 cm.) covered with parchment paper and take it to the oven.
- We bake approximately 25 minutes and then we open the oven and sprinkle it with a mixture of sugar and cinnamon.
- Bake five more minutes or until when you prick with a toothpick or knife we see that it is done.
