Pumpkin Chocolate Muffins

There is no sweet that has chocolate that I can resist trying. With these pumpkin chocolate combo muffins he played with an advantage; I had tried this same combination of flavors in biscuits before. The result did not disappoint me and I am sure that I will repeat them again.

Don't be afraid of having to prepare two doughs because it won't be like that. The muffins are made with a single mass to which we add chocolate and creating the combined effect is as simple as pouring both preparations at the same time into the molds. If you don't feel safe, you just have to hire a helper for the task.

The combined pumpkin and chocolate muffins that we prepare today are tasty and very colorful. Perfect to brighten up the table at breakfast or snack.

Ingredients
  • 1 cup oil
  • 2 cups of sugar
  • ¾ cup of orange juice
  • 4 eggs
  • 35 g. pumpkin puree (made with roasted pumpkin)
  • 1 teaspoon vanilla essence
  • 3 ½ cups of flour
  • 2 teaspoons of baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ¼ cup melted chocolate (mine 70%)
  • 1 knob of butter
  • ¾ cup of cocoa powder

Preparation
  1. We preheat the oven to 180ºC and prepare a metallic muffin tray with paper capsules.
  2. In a large bowl we mix the oil, sugar, orange juice, eggs, pumpkin puree, and vanilla until well combined. I have used the electric mixer.
  3. In another bowl, we sift the flour, baking soda, salt and cinnamon.
  4. We add this last mixture to the pumpkin and mix until fully integrated.
  5. Then we divide the dough in two bowls and set aside.
  6. We combine the melted chocolate with the butter and reserve.
  7. In one of the bowls we add both the cocoa powder and the melted chocolate and we mix.
  8. We put each dough in a sleeve or freezer bag. In this case we cut a corner in both bags and at the same time and exerting the same pressure, we fill the capsules up to ¾ of its capacity.
  9. Bake 20 minutes or until done.
  10. Then we remove from the oven and let the muffins cool for 5 minutes. Then we take them out and we let them cool completely on a rack.
