Today we prepare a puff pastry coca with roasted vegetables, cheese and anchovies, very similar to the classic coca de recapte that is traditional in Catalonia
This coca admits infinite ingredients since it was done in order to take advantage of the remains of food.
The typical one is roasted vegetables such as aubergines, peppers and onions and to this is added what we have at home.
This time I have put goat cheese and some anchovies, we like it a lot at home. It is ideal for a casual dinner.

Ingredients
- 1 rectangular puff pastry
- 1 eggplant
- 1 red pepper
- 1-2 onions
- 2 cans of anchovies
- A roll of goat cheese
- Buy
Preparation
- We will start by putting the vegetables on the oven plate, we will wash them, put them on the oven plate whole with a jet of oil and we will roast them at 180 ºC for about 45 minutes.
- When they are, we will remove them and peel the peppers, the aubergines and make strips, we will chop the onion.
- We will put the puff pastry in a baking dish, we will prick the entire base of the dough with a fork and without reaching the edges we will put interspersed strips of vegetables, we will sprinkle with a drizzle of oil.
- We put in the oven at 180ºC for 15 minutes.
- We remove the plate from the oven after 15 minutes and distribute the anchovies all over the coca, we will cut the goat cheese into slices and we will put pieces for the coca, we put in the oven for 10 more minutes at 200ºC or until the cheese is all golden and remove from the oven.
- Cut into pieces and ready to eat !!!
- It is delicious hot and cold.
