Ingredients
  • 2 onions
  • 2 green peppers
  • 2 zucchini
  • 1 eggplants
  • 1 kilo of tomatoes or a can of crushed tomato

Preparation
  1. We wash the vegetables and cut them into small pieces.
  2. Heat a frying pan with a drizzle of olive oil, put the chopped onion, green peppers, cook for a few minutes until soft, put the eggplant and the zucchini cut into squares, we will let it poach all together.
  3. When we see that it begins to take color, we will put the grated tomato, or the crushed tomato, we will put a small teaspoon of sugar and a little salt and pepper, we will cook everything, about 15 minutes or until everything is well done.
  4. When it is rectified with salt.
  5. We turn on the oven at 180ºC

We prepare the puff pastry, we will put a sheet of puff pastry on the baking sheet, we leave the paper that is underneath, we prick the dough with a fork so that it does not rise too much, we fill with the vegetables leaving without reaching the edges of the dough, We make some holes between the vegetables and put the raw eggs, cover with the other puff pastry, roll up the edges and prick the dough a little with a fork.
  7. Beat an egg, paint the dough with it and cover with a little grated cheese (optional).
  8. We put it in the oven until it is golden.
  9. And ready !!!
