Shrimp rice casserole
El rice with prawns is a very typical recipe in Spain, since the rice is a rich food that is consumed a lot, especially in casseroles or paella, and, if it is accompanied by some good prawns, it becomes a delicacy of gods.
This is a very strong dish, for recover energies and the necessary nutrients, since all its ingredients are healthy for a good diet.
Ingredients
- 1 onion.
- 1 red pepper
- 2 garlic cloves.
- 2 ripe tomatoes.
- Prawns (with the shells we will make a stock).
- Rice.
- Olive oil.
- Salt
Preparation
First, we will do a stir fried. To do this, we will peel and chop all the vegetables, the cut does not matter if it is irregular, because then, we will crush it. We will poach everything in this order: Garlic, onion, pepper and tomatoes.
At the same time that the sauce is being made, we will peel the prawns. Removing all the shells and reserving them for later, make the fish stock.
Then we will sauté the prawns in a frying pan with a little olive oil. We must not add salt to anything, we will only do it at the last minute.
El smell It consists of putting the shrimp shells with a little oil in a casserole. Over a low heat, let them toast a little and crush it to extract all its essence. Then add water and let it boil for 30 minutes.
Then we will add the rice to the sauce, we will stir a little to release the starch and we will add twice as much water as rice. Finally, we will add the prawns and let it cook until the rice has the consistency that you want, or dry or soupy. Now, it is time to taste and rectify the salt if necessary.
