Prawn curry

  • 500 gr. raw peeled prawns
  • 1 tablespoon of curry
  • ½ tablespoon ginger
  • 150 ml. coconut milk
  • 2 tablespoons of tomato sauce
  • ½ onion
  • 1 handful of coriander
  • 1 lime or lemon
  • Olive oil
  1. To prepare the prawn curry, we first clean the prawns, if they are already peeled, we first salt them.
  2. We put a casserole over medium heat with a jet of oil, sauté the prawns, remove and reserve.
  3. Peel the onion and cut into very small pieces. We add it to the casserole where we have sautéed the prawns. We poach it until it is transparent.
  4. Add the fried tomato to the onion, mix well. Add the coconut milk and cook for a few minutes.
  5. Add the curry, the teaspoon of ginger and a little salt, stir well. We taste the sauce, we can add more of some spice.
  6. Add a dash of lime or lemon to taste.
  7. When the sauce is to our liking we will add the prawns to the casserole and mix, let everything cook together for a few minutes.
  8. Chop the coriander, if you don't like it you can put parsley, we add it to the casserole with the prawns. We turn off and let it rest for a few minutes.
  9. We serve immediately hot.
  10. We can accompany this dish with a long rice or cooked basmati rice.
