  3. While the potatoes are cooking we prepare a mash. Peel and chop the garlic, put them in a mortar with the washed and chopped parsley.
  4. We crush everything well, once it is well crushed we add a few tablespoons of vinegar, as you like you can add more vinegar, we also add 2-3 tablespoons of water, stir it and mix well.
  5. Once the potatoes are there, we can remove a little oil if there is much, add the mash and season with a pinch of salt.
  6. We mix everything and let the flavors mix. We will have medium high heat. We let it cook for 2-3 minutes and remove from heat.
