- 5-6 potatoes

- To prepare the potatoes with garlic, parsley in the vinaigrette, we will start by peeling the potatoes, wash them, dry them and cut them into thin slices less than one centimeter.
- We take a wide frying pan, add a splash of oil, add the potatoes, we will have them over medium heat, we want them to be done and not burn, they have to be cooked inside and brown a little on the outside. About 15 minutes.
- While the potatoes are cooking we prepare a mash. Peel and chop the garlic, put them in a mortar with the washed and chopped parsley.
- We crush everything well, once it is well crushed we add a few tablespoons of vinegar, as you like you can add more vinegar, we also add 2-3 tablespoons of water, stir it and mix well.
- Once the potatoes are there, we can remove a little oil if there is much, add the mash and season with a pinch of salt.
- We mix everything and let the flavors mix. We will have medium high heat. We let it cook for 2-3 minutes and remove from heat.
- Serve in a very hot source.
