At home we love potatoes. We are used to incorporating them into traditional stews and roasts and preparing tortillas and mixed scrambled. It is not usual, however, to cook them as I propose today, stuffed with cheese. And it won't be because I don't like the end result; simple and tasty at the same time.
Cooking some stuffed potatoes is not complicated but it does require some planning. I like to cook them in the oven; although the process can be slightly lightened by cooking them in water or with some heat strokes in the microwave. Although in the recipe we have used Gouda cheese, You are free to put the one you like the most, it's your dish!
- 2 medium potatoes
- 1 teaspoon of olive oil
- 75 g. Gouda cheese
- 2 chives
- 3 teaspoons mayonnaise
- A nut of butter
- We preheat the oven at 200ºC
- We wash and we dry the potatoes. We prick them with a fork and place them on the oven tray. We smear them with olive oil and bake until tender, between 45 and 70 minutes.
- When the potatoes are soft, we take them out of the oven and we let them warm.
- Meanwhile, we grate the cheese and chop the chives. We mix both in a bowl with the mayonnaise.
- When the potatoes are warm and can be handled, as if it were a lid, we remove ⅓ from the top of each one of them. Then carefully we take out the meat of the thick part, with the help of a spoon.
- We mash the meat of the potato and mix it with the chives, the cheese and the mayonnaise.
- We stuff the potatoes with the mixture and au gratin in the oven for 10 minutes, until the cheese melts.
- Before serving we place a small amount of butter about each one of them.
