Lyonese potatoes

Potatoes are another food that always gets us out of the way. Today I present you some tasty potatoes a la Lyonesa, to see if you dare to do it:

Ingredients

  • 3 onions Oil
  • 1 can of diced tomatoes
  • 1 hoja de laurel
  • 1 tablespoon of paprika
  • 300 cm3 of hot vegetable broth
  • 1/2 glass of white wine
  • 1 kilo of potatoes
  • 1 cube of butter
  • 1 tablespoon chopped herbs of choice
  • Salt and pepper to taste

Preparation:
Cut three onions into fine Julienne strips and sauté them in a little oil, add a can of chopped tomato and the bay leaf and cook for 3 minutes.

Dissolve a tablespoon of paprika in the hot vegetable broth, add it to the sauce along with the white wine, herbs, salt and pepper.

Cut the potatoes into slices, and put butter in a baking dish, place a little sauce and on it a layer of potato wedges.

Repeat the operation and cook in a moderate oven until the potatoes are very tender.
