Ingredients

Preparation
  1. To prepare the Riojan potatoes we will start by peeling the onion, we chop it small. Peel the garlic and chop it.
  2. In a saucepan put a splash of oil, add the onion to poach.
  3. When the onion is poached, add the minced garlic. We will be careful not to burn, we will stir.
  4. Cut the chorizo ​​into slices, add them to the pan, and let it cook for a few minutes.
  5. Peel the potatoes and cut them into pieces by clicking them, this is so that the potato releases the starch and thus thickens the broth.
  6. Add the potatoes to the pan, stir with everything.
  7. Add the tablespoon of sweet paprika and the bay leaf, you can put a pinch of hot paprika. Stir the potatoes and chorizo ​​with everything for a couple of minutes and cover the potatoes with water, the potatoes should be covered. Add a little salt.
  8. Let it cook over medium heat for about 20-30 minutes or until the potatoes are tender.
  9. When they are cooked, we taste of salt in case it is necessary to rectify. If the broth is very thin, we will take some potatoes, crush them and add them to the broth and it will be a little thicker.
  10. And it will be ready to serve.
