  4. When the potatoes are, they must be very soft, we remove them and leave them in a drainer to release the excess oil.
  5. In a bowl we put the 6 eggs, beat well, we will put a little salt. We add the potatoes, stirring well so that they integrate with the egg, then we add the chopped and sautéed chorizo ​​and we mix everything again.
  6. We put a frying pan to make the omelette, we will put a little oil, when it is hot we will dump all the mixture of the egg, potatoes and chorizo.
  7. When we see that the egg begins to curdle on the sides, we will turn the omelette with care and skill.
  8. We will let the omelette finish, giving it the point that you like, more curd or less.
