After Christmas meals I usually feel like eating more than ever vegetable soups and creams, Does it also happen to you? And this potato and leek cream is one of the many alternatives that we have shared with you on this blog and that you can easily prepare.

There is nothing easier than putting some ingredients in a pot and letting it do its job. There is no excuse not to cook one potato cream how are you; You just need to get hold of the ingredients and "watch" the pot for half an hour. Easy right?

Ingredients
  • 1 teaspoon of extra virgin olive oil
  • 3 leeks, sliced
  • 2 garlic cloves, crushed
  • 1 kg. potatoes, peeled and chopped
  • 1 hoja de laurel
  • 75 ml. white wine
  • 1 L of chicken broth
  • 100 ml of evaporated milk (optional)
  • Salt and pepper

Preparation
  1. We put in a casserole the oil, the leeks, the garlic, the potatoes and the bay leaf.
  2. We heat up and when it's hot we add the white wine and sauté a couple of minutes.
  3. After add chicken broth until potatoes and leeks are covered and cook 30 minutes or until ingredients are tender.
  4. We remove the bay leaf and we crush until obtaining a cream gentle. To make sure it has the consistency you want, first remove a cup of broth and add it again once the rest has been crushed if you think it's necessary.
  5. Once crushed, we add the evaporated milk and cook 10 minutes.
  6. Finally, season to taste and we serve.
