Today's is a simple recipe that becomes a great ally to complete the weekly menu. Why? Because this pork tenderloin with mushrooms and broccoli in soy sauce combines animal protein, vegetables and nuts in the same dish.
To complete your menu you will only have to accompany this dish with a cup of rice or couscous. I usually choose brown rice when I prepare it to eat and the result is fantastic. In addition, it is a dish that most people like, probably because of that special touch that soy sauce gives it.
Can be served without nuts and dates but I assure you that these transform it completely. The date gives it sweetness and the nuts add another texture to this dish, a crunchy one. Give it a try! The ingredients are simple and the step by step is child's play.
The recipe
- 2 tablespoons olive oil
- 1 red onion in julienne
- 200 g. mushrooms, chopped
- 1 broccoli, in florets
- 1 small pork tenderloin
- Dates
- 10 almonds (or other dried fruit)
- 1 tablespoon soy sauce
- Salt and pepper
- We heat the oil in a large frying pan and poach the onion for 10 minutes over medium-low heat.
- Meanwhile, let's cook the broccoli in plenty of salty water for five minutes. Afterwards, we drain it and reserve it.
- After 10 minutes add the mushrooms and cook over medium-high heat for a few minutes until they are golden brown.
- Once browned, remove the onion and mushrooms on one side of the pan and on the other, we seal the sirloin diced snack.
- Once sealed, add the broccoli, season and mix well. We add the soy sauce and cook a couple of minutes over medium heat, stirring it from time to time.
- Fura from the fire now, add the chopped dates and the almonds and mix.
- We serve the pork tenderloin with mushrooms and broccoli in soy sauce, hot.
