Pine nut panellets

Today I suggest you prepare some pine nut panellets. The day of All Saints, around this time in our kitchens we began to have chestnuts, sweet potatoes, bones of saints, fritters and panellets, all are typical sweets of these dates.

They are easy to make at home, the cost is cheaper if we do it ourselves and they come out very good, you just have to cheer up. It is better to make the dough the day before.

Ingredients
  • Ingredients: 20 units come out
  • 250 gr. ground almond
  • 200 gr. sugar
  • 70 gr. cooked potato
  • 2 eggs
  • Lemon zest
  • 100 gr. pine nuts

Preparation
  1. We will put a saucepan with water to boil, wash the potato well and cook it with its skin. It can also be sewn in the microwave. When the potato is ready, let it cool a little and mash it with a fork.
  2. In a bowl we will put the sugar and the ground almond.
  3. We will add the potato and the lemon zest.
  4. In a plate we will put an egg we will remove it without beating it. We will add it to the dough, we will knead everything until all the ingredients are well integrated.
  5. Take the dough, put it in transparent film, form a roll with the dough, close the roll at the ends.
  6. We will leave it in the fridge for at least 12 hours or until the next day.
  7. Once this time has passed, we will remove it from the refrigerator.
  8. We will put the oven to heat to 180º and we will begin to prepare the panellets. In a plate we will beat the other egg and add the pine nuts.
  9. We will make balls with the dough, we will put them on the plate together with the pine nuts and the egg.
  10. We will help each other to glue the pine nuts and coat the balls that we will put on a baking sheet.
  11. Once all the balls have been made, we will put them in the oven at 180º until they are golden brown.
  12. Let cool and they will be ready.
