Any dish with peas is a good option to cook at any time of the year. It is easy to find peas in various formats, very easy to maintain and very useful to keep in the pantry for many and different occasions.
As much as to include them in your weekly menu for the family, as to use them occasionally to save an unforeseen meal. Peas are very easy to cook, as well as being a very economical food and one of the vegetables best accepted by children.
In this case, we are going to cook them with eggs and ham. This way you will have a complete plate that covers all nutritional needs. You can serve it as a single dish, since the egg provides the necessary protein, or you can serve it as a light starter.
- 1 250g can of peas
- 2 eggs
- 1 quarter onion
- 50 g of serrano ham in small pieces
- extra virgin olive oil

- Chop the onion very finely and brown with a drizzle of extra virgin olive oil.
- We add the peas with the broth that they carry for their conservation.
- Let the peas cook for about 10 minutes over medium heat, without allowing all the broth to consume.
- We break the 2 eggs on the peas, leaving space between them.
- Cover with a lid so that the egg curdles.
- We raise the lid constantly so that the egg is not overcooked, add salt.
- Add the serrano ham cubes.
- We finish curdling the eggs and that's it, let it rest for a few minutes and serve.
If you want to add a different touch, add a splash of white wine to the cooking of the peas.
