Chicken, romanesco and cashew stir fry

At the beginning of this year, La Huerta has given us some Romanescos that we have been able to take advantage of in the kitchen. Because in addition to being beautiful, this vegetable is very versatile; It can be served both raw and cooked in salads, creams or recipes like the one I propose today: stir fry chicken and romanesco with peanuts.

The Romanesque has a low caloric power and it is very rich in fiber, vitamin C, vitamin K and provitamin A. Therefore, an interesting option to integrate into our menu during the winter months, which is when it is collected. This is a very simple way to present it and ideal for those who have not yet encouraged to try it.

Simple, fast and healthy, so is this recipe. I personally prefer cooked romanescu over other vegetables like broccoli. Four minutes of cooking are enough for me before sautéing, but you can modify the times depending on how you like the vegetables. Do you dare to prepare this dish with me?

Ingredients
  • 1 romance
  • 2 tablespoons of extra virgin olive oil
  • 1 cebolla
  • 1 green pepper
  • ½ red pepper
  • ½ chicken breast, diced
  • A handful of peanuts
  • ⅓ teaspoon turmeric
  • ⅓ teaspoon black pepper
  • A splash of soy sauce

Preparation
  1. We separate the romanesco into twigs and cook them in plenty of salted water for 4 minutes. Then we drain and reserve.
  2. While the romanesco cooks we chop the onion and the peppers roughly.
  3. Heat the extra virgin olive oil in a large frying pan and sauté the onion and peppers for 5 minutes.
  4. Then we incorporate the chicken and sauté over medium-high heat until golden brown.
  5. We add the cooked romanesco and we sauté a couple of minutes more so that it takes heat.
  6. Then we add the spices and the soy sauce and stir while we cook the whole for two more minutes.
  7. In the last moment we incorporate the peanuts and we serve the chicken and romanesco stir fry with peanuts.
