Long ago i did this peach cake but I haven't found the time to post it. It is a simple cake and that is why I did not want to miss the opportunity to share the recipe with you. Also, just like we do with peaches, we could prepare it with another fleshy and juicy fruit like this one.

I'd say this peach cupcake is one of those top cupcakes. It is ideal to give a sweet touch to breakfast or a snack, but we can also do it serve as dessert, decorating it with fresh fruit on top and a little icing sugar. Save the recipe and rescue it when the time comes.

Ingredients
  • 4 peaches
  • 2 eggs
  • 100 g. of sugar
  • 100 g. Of flour
  • 20 g. sunflower oil
  • 80 g. semi-skimmed milk
  • 1 sachet of chemical yeast
  • A teaspoon of liquid vanilla
  • A pinch of salt

Preparation
  1. We preheat the oven at 180 ° C. We prepare the mold, greasing and flouring it or lining it with greaseproof paper.
  2. We peel and we cut the peaches in very thin and regular sheets.
  3. We beat the yolks egg and sugar with the rods until the mixture is fluffy and white.
  4. In another container, we mount the whites on the verge of snow.
  5. Add the oil, milk, vanilla and flour sifted with the yeast to the mixture of yolks and sugar, ingredient to ingredient, beating after each addition at low speed until a homogeneous dough is achieved.
  6. Then we incorporate the whites carefully, through enveloping movements so that the dough does not lose air.
  7. In conclusion, we add the fruit and we finished mixing.
  8. We pour the dough into the mold and put it in the oven. We bake 40 minutes, approximately, or until when puncturing with a plate in the center, it comes out clean.
  9. We remove from the oven and let it warm 10 minutes before unmold on a wire rack.
