Pasta with zucchini and egg



1 medium zucchini
300g pasta
100g mozzarella
3 tablespoons of Parmesan cheese
3 eggs
1 / 2 cebolla
4 tablespoons olive oil
2 sprigs of mint
Salt and pepper

Wash, dry and grate the zucchini on a large hole grater. Peel and slice the onion. Sauté the zucchini together with the onion in a frying pan together with the oil, for 4-5 minutes over high heat. In a saucepan with plenty of salted water, cook the pasta until it is al dente. While in a bowl beat the eggs together with the grated cheese, pepper and salt.
Transfer the drained pasta to the frying pan, add the egg, the diced mozzarella and the minced mint. Sauté until the egg is set
