- To coat the pumpkin panellets
- 100 gr. granillo almonds, pine nuts ...
- 100 gr. raw whole almonds
Preparation
- To prepare the pumpkin panellets, we will start by cooking the pumpkin.
- We will cook the pumpkin, cut it into pieces, put it in a bowl and cook it for 7-8 minutes. We take it out and crush it well so that there are no pieces left.
- In a bowl we put all the ingredients the ground almond, the sugar, the pumpkin and the lemon zest. We mix everything well.
- We form a roll with the dough, wrap it with plastic wrap and leave it in the fridge from one day to the next.
- We prepare the panellets, put the granillo almonds in a bowl or plate, a little sugar on the other and on the other hand the raw almonds. We make balls with the dough, we pass a few through the granule almond, others we pass them through sugar and we put a raw almond in the middle.
- We are putting the balls in a baking dish. We beat the egg and with a kitchen brush we paint the base of the panellets.
- We put the tray in the oven at 180º C until golden brown. We take them out, let them cool down to room temperature and they will be ready to enjoy !!!
- They are very good and as you can see they are prepared right away. If you have them, they keep well for several days stored in a can.
