Panellets with pumpkin

We are going to prepare some panellets with pumpkin, ideal for these days of All Saints.

A rich and simple sweet to prepare, you will surely like them, the pumpkin is very healthy and with a sweet taste so I usually put less sugar. If you like it sweeter, add more sugar.
So that all the ingredients are well mixed, they must be left in the fridge for 24 hours.

Ingredients
  • 250 gr. cooked or roasted pumpkin
  • 300 gr. ground almond
  • 150 gr. sugar + 2-3 tablespoons apart to coat
  • 1 egg
  • ½ lemon zest (optional)
  • To coat the pumpkin panellets
  • 100 gr. granillo almonds, pine nuts ...
  • 100 gr. raw whole almonds

Preparation
  1. To prepare the pumpkin panellets, we will start by cooking the pumpkin.
  2. We will cook the pumpkin, cut it into pieces, put it in a bowl and cook it for 7-8 minutes. We take it out and crush it well so that there are no pieces left.
  3. In a bowl we put all the ingredients the ground almond, the sugar, the pumpkin and the lemon zest. We mix everything well.
  4. We form a roll with the dough, wrap it with plastic wrap and leave it in the fridge from one day to the next.
  5. We prepare the panellets, put the granillo almonds in a bowl or plate, a little sugar on the other and on the other hand the raw almonds. We make balls with the dough, we pass a few through the granule almond, others we pass them through sugar and we put a raw almond in the middle.
  6. We are putting the balls in a baking dish. We beat the egg and with a kitchen brush we paint the base of the panellets.
  7. We put the tray in the oven at 180º C until golden brown. We take them out, let them cool down to room temperature and they will be ready to enjoy !!!
  8. They are very good and as you can see they are prepared right away. If you have them, they keep well for several days stored in a can.
