Pancakes with caramelized apple

This week we invite you to prepare a very special breakfast: pancakes with caramelized apple. At home we do not usually prepare this type of breakfast but once a year they do not hurt and even like them. The pancakes by themselves are delicious but the apple just made them stand out.

The side of caramelized apple adds a lot of flavor to this dish. You can also use it to accompany yogurt or ice cream and improvise a fantastic dessert any other day. The only but? What will you have to get up a little earlier than to prepare some toast, but not much!

Ingredients
For the apple accompaniment
  • 2 Fuji apples, peeled, cored and diced
  • ¼ cup maple syrup
  • 2 tablespoons of butter
  • 2 tablespoons brown sugar
  • 1 teaspoon of cinnamon
For the pancakes
  • 290 ml. almond milk
  • 1 tablespoon of lemon juice
  • 175 g. Of flour
  • 2 tablespoons brown sugar
  • 1,5 teaspoons of baking powder
  • 1 teaspoon of cinnamon
  • ½ teaspoon bicarbonate of soda
  • ½ teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla essence

Preparation
  1. In a frying pan we mix all the ingredients of the apple accompaniment. We heat over medium heat and when the mixture begins to sizzle, we lower the heat a little and cook 15-20 minutes, stirring often, until apples are soft. So, we remove from the heat and cover to keep them warm.
  2. While we prepare the accompaniment, we mix in a bowl milk with lemon juice. We stir and let it rest for 5 minutes.
  3. In another bowl we mix the dry ingredients: flour, sugar, yeast, cinnamon, baking soda, and salt.
  4. After 5 minutes we add to the first bowl the lightly beaten eggs, softened butter and vanilla extract.
  5. Then we add the sifted dry ingredients little by little while we stir to avoid lumps.
  6. Heat a small non-stick frying pan over medium heat. Lightly spray with oil and once hot, add 1 scoop of dough. Cook for 2-3 minutes or until the edges start to bubble and the bottom is golden brown. We turn and cook another 2-3 minutes, until the pancake is ready. We repeat the process.
  7. We serve freshly made with apple.
