Ingredients
  • 400 gr. of rice
  • 500 gr. squid
  • 4 cloves of garlic
  • 1 liter of fish stock
  • 150 gr. of crayfish
  • 4 tablespoons of tomato puree
  • 1 Onion
  • 200 gr. shrimp
  • 300 gr. mussels
  • 200 gr. clam
  • Paprika
  • Saffron
  • Sal Island

Preparation
  1. In a paella pan, we are going to heat the olive oil. To this we will add the onion well cut into slices to fry together with the garlic cloves (chopped or whole, as you want). We wait for them to brown.
  2. When the onion and garlic cloves are golden brown, we will proceed to add the pieces of squid cut into cubes so that with the oil they are made little by little and take on the flavor of the onion as well.
  3. When we see that the squid are almost done, we add 4 tablespoons of crushed natural tomato. We stir everything well and let it cook over medium heat for about 5 more minutes. In this way, heThe flavors will blend.
  4. Then add the paprika and then add the rice. We stir everything well again and then add the saffron to taste. Sauté everything a little for a couple of minutes and then add the liter of fish broth.
  5. We leave it for a while over medium heat so that the broth reduces. We add a little salt, to taste.
  6. We hope that the water is consumed a little to pour crayfish, prawns and clams and we let everything cook for about 15 minutes over medium heat with the lid on, stirring it from time to time so that it does not stick. If we run out of stock quickly, we can add a little more fish stock.
  7. After 15 minutes we only have to let the rice rest for a couple of minutes and it is ready to eat.
