Preparation
  1. First we will heat the oven to 200º. We wash the peppers, dry and put them in a baking dish, with the help of a kitchen brush we paint them with olive oil on all sides and add a little salt.
  2. We put them in the oven and lower the temperature to 180º, and roast them for 50 minutes, during this time we will turn them over so that they brown all over.
  3. You have to let them rest and to remove the skin well, I put a kitchen towel on them and let them sweat for a while, about 15 or 20 minutes.
  4. We will remove the skin and remove the strips on a plate, we will remove the seeds.
  5. We reserve the liquid that has been released in the tray.
  6. I mix this pepper juice with olive oil. If we are going to use them at the moment, we serve them on a plate with a minced garlic if you like and add a little of the juice with the oil.

  8. You just have to put them in glass jars and cover them with their juice and oil and if you like to add pieces of sliced ​​garlic, they give a very good flavor. You can keep them for a month, in the fridge.
  9. This way, they keep for several days in the fridge, but if you have made enough and you want to keep them so that they do not spoil, I put them in glass jars and without reaching the top, you have to leave about a couple of cm. and freeze.
  10. You can also make them in a bain-marie, it has a bit more work to do so it also looks great.
