Ingredients
  • 250 g. egg
  • 225 g. of sugar
  • A pinch of fine salt
  • 200 g. butter at room temperature
  • 250 g. whey (235 g. of milk + 15 g. of lemon juice)
  • Zest of two oranges
  • 375 g. all-purpose flour
  • 15 g. baking yeast, an envelope
  • 100 g. chocolate chips

Preparation
  1. We prepare the serum of milk adding 15 g. of lemon juice to 235 g. milk. We stir and let it rest 15 minutes before using.
  2. We turn the oven to 180º and grease the mold or molds with butter.
  3. We beat the eggs, salt and sugar for 10 minutes until white.
  4. Then we add the butter and beat until integrated.
  5. We incorporate the serum of milk and the orange zest and beat at low speed until a homogeneous dough is obtained.
  6. Little by little, we add the flour and mix with a spatula to integrate it.
  7. Finally, we add the chocolate chips and mix.
  8. We pour the dough into the molds and hwe bake for about 50 minutes if we do it in a single large mold; until the cake is done.
  9. Remove from the oven, unmold after 10 minutes and Let cool on a rack.
