Ingredients
  • 3 eggs L
  • 1 glass of olive oil
  • 1 glass of fresh orange juice
  • 2 glasses of sugar (can be brown sugar)
  • 2 glasses of pastry flour
  • 1 sachet of backing powder
  • the scrape of a lemon

Preparation
  1. First we are going to prepare the lemon scrape, for this, we previously wash it very well and dry it with absorbent paper.
  2. With the help of a fine grater, we remove the scrape from the lemon, being careful not to take it beyond the peel, since the white part of the lemon is bitter.
  3. Now we are going to separate the yolks of the eggs from the whites.
  4. We beat the whites with some rods until we get the point of snow.
  5. Next, we add the sugar, the yolks that we had reserved and the lemon zest.
  6. We mix carefully with a spatula, without beating the mixture.
  7. We continue adding ingredients, now the orange juice, the oil and the yeast.
  8. Finally, we add the flour little by little without stopping mixing.
  9. We preheat the oven to 180º and place a container with water in the oven.
  10. In the mold we put a baking paper to prevent it from sticking.
  11. Add the mixture and give a few taps with the mold on the countertop, in this way we prevent bubbles from coming out inside.
  12. We bake for about 40 minutes.

Notes
To know if the cake is ready, click with a kitchen toothpick, if it comes out clean it means that it is completely cooked. Otherwise, we will have to let it cook for a few more minutes, checking frequently if it is well cooked.
