Preparation
  1. To prepare the omelette with onion and eggplant, we will start by washing the eggplant, cut the ends, cut it in half and finish dividing it into small squares.
  2. Peel the onion and cut it into pieces.
  3. We put a frying pan on the fire with a jet of oil over medium heat, we add the onion and the eggplant in pieces, we let them poach until the vegetables are well cooked for about 20 minutes. If necessary we will add a little oil. Halfway through cooking we will add a little salt.
  4. In a bowl we will put the eggs and beat well, add the poached vegetables, mix everything, add a little more salt.
  5. We put a non-stick frying pan over medium heat with a very little oil, we add all the tortilla mixture.
  6. When it begins to be done on the sides, we will turn the omelette with the help of a plate, let it cook on the other side, let the omelette cook until it is ready.
  7. This omelette can be eaten overnight or taken to work, it is just as good.
  8. We can leave the omelette well done or make it juicier, depending on how we like it.
