Today we are going to prepare a delicious muffins with olive oil. A very simple traditional homemade muffins with a very rich flavor of oil. We can also use sunflower oil, it gives a milder flavor.
A classic breakfast or snack, perfect to accompany with a coffee, rich fluffy and juicy sponge cake that can not be missing in any home. They keep well for several days in a can.

Ingredients
- Ingredients: (24 units)
- 375 gr. pastry flour
- 3 eggs size L
- 250 gr. sugar
- 250 gr. milk
- 250 gr. mild olive oil
- 1 sachet of backing powder
- A pinch of salt
- Lemon zest
- pine nuts and sugar for garnish
Preparation
- In a bowl we put the eggs with the sugar and beat for 5 minutes, so that the mixture is very fluffy and the muffins will be fluffier, if you have a whisk much better, by hand it is heavier and the dough is not so fluffy .
- Add the milk, beat, beat the oil again and the lemon zest.
- Apart we mix the flour with the yeast and a pinch of salt, we will sift it with a strainer, we will gradually add it to the previous mixture, stirring slowly and integrating the flour well.
- We will leave the dough resting for 30 minutes in the fridge before baking them. We turn on the oven at 180ºC.
- We prepare the muffin capsules, we put them on the baking sheet and we will fill them in the ¾ parts of the mold, we put a little sugar on top and if you like some pine nuts, we put it in the oven for about 20 minutes or until when punctured with a toothpick this comes out dry.
- We will remove from the oven, let it cool.
- And ready !!!
- They keep for several days in a can.
