This recipe has been with me for a long time and it was time to share it! Are olive oil cookies They are some of the simplest cookies that I have prepared; not only because no tools are needed to make them, but also because they are easily shaped by hand.
You can prepare them anywhere as long as you have a scale and an oven and the first thing you will no longer need when you have cooked them a few times. As if that were not enough, they have a crunchy texture and a fantastic flavor in which both the oil and the lemon are perceived.
Have I convinced you to prepare them? Only you will need 6 ingredients for it and it is very possible that at least five of them are already in your pantry. Save the recipe for the weekend, if you don't have time to prepare them today, and enjoy these olive oil cookies.
The recipe
- 2 eggs
- 180g. sugar + extra for dusting
- 140 g. extra virgin olive oil
- Zest of 1 lemon
- 2 envelopes of gasifier
- 400 grams of common flour
- Dark chocolate for desserts (optional)
- Beat the eggs and sugar with some manual rods or a fork until both ingredients are integrated.
- Then we add the oil and lemon zest and mix until incorporated.
- Once incorporated, add half of the sifted flour and the gasifier and mix with a spatula or wooden spoon until a homogeneous mixture is achieved.
- In conclusion, Add the other half of the flour, first with the spatula, then with the hands. The resulting dough should not stick and should be easy to handle.
- when we get it, preheat the oven to 180ºC, we lined the tray with baking paper and lightly greased our clean hands with oil.
- We shape the cookiess taking small portions of dough and making balls with them with a slightly elongated shape. As we form them, we place them on the baking tray leaving a couple of centimeters between one and the other.
- When the tray is full, with a fork we press lightly each of the cookies to finish giving them shape.
- sprinkle some sugar on each of them and to finish we take them to the oven.
- Bake 18 minutes or until edges begin to brown lightly.
- Then we take out and place the cookies on a rack to cool while we prepare the second batch.
- Once the olive oil cookies are cold we can partially dip them in chocolate (melted in a bain-marie) or enjoy them as is.
