Oil cakes; covering Inés Rosales

Oil cakes
Preparing desserts at home gives one double satisfaction. The first one is to enjoy the process and the aromas that it gives off. The second, to know that you are giving to yours homemade sweets, without saturated fat and therefore much healthier than other "prefabricated."

These oil cakes they resemble those of Ines Rosales that you surely know. They are a great temptation and it is difficult to stop when you have them in front of you. I advise you to use a good virgin olive oil for its preparation, it is one of the keys to this simple dessert with which you can sweeten Easter.

Ingredients

For 15 cakes

  • 100 grams of Virgin Olive Oil
  • The zest of half a lemon
  • 10 grams of anise beans
  • 140 ml of water
  • 20 g. fresh baker's yeast
  • 40 g. sweet anise liqueur
  • 40 g. of sugar
  • 360 g. strength flour
  • 1/2 tsp. Salt
  • 20 g. Sesame seeds
  • Sugar to coat

Crafting

We heat the oil with the lemon zest and the anise beans to infuse for 4 minutes. It should not boil or smoke. Let it cold down.

Meanwhile, in a bowl we combine the yeast and water at room temperature or slightly warm. Let it rest for a minute and stir until the yeast dissolves completely.

Add the anise liqueur, the oil with the zest, the flour, the salt, the sugar and the sesame seeds to the bowl. We knead until you get a smooth dough that comes off the walls of the container. Cover with a clean kitchen towel and let the dough rise to double its volume in a warm place.

We preheat the oven at 230 degrees.

We take portions of dough of about 35 grams, we make balls and flatten them with the roller until they are very fine. We do it on sugar so that it sticks to the cake.

We place the cakes on the baking tray lined with greaseproof paper and we round them, stretching out the edges with your hands.

Bake 6-8 minutes heat up and down until golden brown.

We take out of the oven and leave them cool on a wire rack.

You can keep them in a can for days, although I assure you that they will not last as long if you have them on hand.
