Octopus with cachelos

All dishes in the kitchen have their way of preparation depending on the person or the area in which you live, but from here we are going to give you our personal recipe for preparing the octopus with cachelos that always triumphs among our guests, although for this it is very important that you use the thecooksters octopus terrine since it is the tastiest and with which we get the best results.

Stewed octopus with potatoes
The octopus with cachelos is one of the most traditional recipes in Galicia. It is also known by the name of octopus a feira or Galician octopus.

Ingredients
  • Octopus (You have to take into account that it reduces a lot. From here we advise you to buy a box of TheCooksters octopus terrine that serves four people).
  • Potatoes (We usually use one potato per person, although the size of the potatoes must be taken into account since if they are small, we can use two potatoes per person).
  • Extra Virgin Olive Oil
  • Paprika (Depending on the taste of the diners we have, we will use either sweet paprika or hot paprika. We usually use sweet).
  • Gorda
  • 1 bay leaf

Preparation
  1. First we proceed to buy the octopus. By buying the octopus terrines, it is already clean and thus we save time at home in the cleaning process. If we buy an octopus that is not in a terrine, we will have to clean it.
  2. Fill a large casserole three-quarters full with water and add a handful of salt along with the bay leaf. Bring the water to a boil. The next step we will do in the case of not having the terrine, since if we have a normal octopus, we will grab it by the head and put it in and remove it up to three times from the pan and on the fourth we leave it in to cook with the boiling water.
  3. We will let it cook for about 45 minutes. To check its cooking state, use a wooden skewer to chop it. When the skewer pierces the octopus well, it will be fully cooked.
  4. On the other hand, while the octopus is cooking, the potatoes can be cooked in the same casserole. When we see that the potatoes are ready, we take them out and the same happens with the octopus.

Form of presentation
The first thing we will do is look for a wooden plate that we have at home, that surely we will all have one. Once we have left the plate on the table, we will peel the potatoes and then we will cut them into slices to put them as a base on that wooden plate.
Then we will put the octopus terrines on that potato base, in the case of having a normal octopus without being a terrine, what we will do is cut the tentacles into slices with a scissors.
Once we have the potatoes together with the octopus already on the wooden plate, we will add a handful of coarse salt, a drizzle of Extra Virgin Olive Oil and sprinkle the paprika.
To serve it, we advise it to be hot, of course.
