Vegetable soup with noodles, a nutritious dinner for children
Often the hardest thing in the kitchen is get dinner rightespecially when there are children. We want them to eat well and we want them to eat healthy… A difficult task? Maybe not so much if we resort to simple recipes that they like as much as we do, a clear example could be the soup that I bring you today. If he asks you "Mom, what's for dinner?" You just say "Noodle Soup" and you will see how he will not give a complaint about the vegetables.
The best thing is that it is a versatile recipe, you can add other vegetables and even meat, chicken or fish. Since everything has been through the blender, it is most likely that he will not complain because he does not like X vegetables. One trick to make it even better is to add a lot of potato, which will give it a smoother and more pleasant texture.
Ingredients
- 2 large potatoes
- 1 Zucchini
- Carrots 3
- 2 tablespoons olive oil
- A handful of noodles
- Sal Island
Crafting
In a pot we heat approximately one and a half liters of water, it can be more or less, depending on the consistency that we want to give the soup. When it starts to boil we add the potatoes, zucchini and carrots, all well washed, peeled and cut into cubes. Carrots and zucchini can be left with their skin if we wash them well, so we will get the most of their vitamins.
We add salt to taste and olive oil. We leave the fire until the vegetables are well done and then we pass everything through the blender. We return to the fire and add the handful of noodles, continue cooking for ten more minutes and that's it.
Tips
If you want to use this soup to "hide" some food, remember to be careful with the quantity, for example, we could add broccoli, but if you put too much the flavor will be noticed so it will be better to just add a little and maybe a couple of cheeses to camouflage the flavor. The same could be done with vegetables with a slightly strong flavor, such as cauliflower.
