Noodles with prawns

I am particularly a lover of thick noodles, that thin and short pasta that can be used in paellas, noodles, broths, ect. I usually make them for grandma's pout or for noodles, but today I present this mixture of fideua and very rich paella.

A rich fish with noodles recipe That takes away the feeling as they say here in Andalusia. This recipe is very succulent for those family lunches where you can enjoy the company of them on those typical Sundays in good weather.

Ingredients

  • 200 g of prawns.
  • Olive oil.
  • 1 glass of white wine
  • Water.
  • 1 leek
  • 3 garlic cloves.
  • 3 tablespoons of fried tomato.
  • 1 crash.
  • 250 g thick noodles.
  • Salt
  • Ground black pepper
  • Dash of food coloring or saffron.

Preparation

First, we will peel the prawns and reserve their bodies for later and, with their shells, we will make a stock or fish broth. To do this, we will put a good background of olive oil in the saucepan and we will add them together with the green of the leek, exerting a little pressure on the heads so that they release their flavor. Let it cook for a few minutes and add the white wine, when the alcohol evaporates, cover with water and add salt to cook for about 30 minutes over low heat.

Then, on a paella pan we will put a good background of olive oil and when it is hot we will toast in the noodles, shaking them well so that they do not burn too much, and we will remove it on absorbent paper.

In that same pan we will add the diced leek and the 3 garlic cloves, minced and sautéed. Then, add the diced cuttlefish and cook for about 15 minutes.

After this time we will add the fried tomato, salt, ground black pepper, the coloring or saffron and the noodles, stirring well to bind the flavors, and cover with twice the fish stock made previously. We will cook until they are dry and the noodle is soft.

Note

The original recipe shows that after sautéing for 5 minutes in the casserole when we have covered with water, it must be introduced into the preheated oven 10 minutes at 240ºC.
