Ingredients
  • 20 g. of butter
  • 1 tablespoon of olive oil
  • 250 g. mushrooms
  • 4 large eggs
  • Chopped parsley
  • Chopped chives
  • Sal Island

Preparation
  1. We clean and we chop the mushrooms.
  2. The we sauté in a pan with 20 g. of butter and a teaspoon of oil until all the liquid is released. Season with salt and pepper.
  3. Meanwhile, we beat the eggs, adding the chopped parsley and chives.
  4. We reserve the mushrooms on a plate and in the same pan, pour the egg.
  5. When the egg is moderately set at the base, we incorporate the mushrooms in one of the halves of the omelette. With the other half we cover the mushrooms.
  6. We take out the tortilla and serve.
