There are days when we don't feel like getting into the kitchen. So we look for simple and quick recipes like this Mushroom omelette with chives. A recipe made with simple ingredients that can make a great "impromptu" dinner for the whole family.
Mushrooms are a common product in any supermarket, but they can be substituted for any other mushroom: cantharellus, shiitakes, boletus, portobellos ... October and November are months in which you can find a greater number of varieties. Regardless of the choice, this is a quick and easy recipe to make that you can serve in just 15 minutes.
- 20 g. of butter
- 1 tablespoon of olive oil
- 250 g. mushrooms
- 4 large eggs
- Chopped parsley
- Chopped chives
- Sal Island
- We clean and we chop the mushrooms.
- The we sauté in a pan with 20 g. of butter and a teaspoon of oil until all the liquid is released. Season with salt and pepper.
- Meanwhile, we beat the eggs, adding the chopped parsley and chives.
- We reserve the mushrooms on a plate and in the same pan, pour the egg.
- When the egg is moderately set at the base, we incorporate the mushrooms in one of the halves of the omelette. With the other half we cover the mushrooms.
- We take out the tortilla and serve.
