Muffins with donut frosting

This recipe for muffins with donut frosting It's been on my "to do" list for a few months. With the long list that I have, it is not surprising that in my house there are not too many recipes, at least as far as pastry is concerned. One likes to discover new things; those that you already dominate will always be there.

The batter for these muffins is basic. What I mean by this? That you can play with it; add chocolate chips, cocoa or other flavorings of your taste. The frosting is what makes these cupcakes special; a glaze that reminds us of donuts and is irresistible. The proof? I made them yesterday afternoon and after breakfast there are none left on the tray.

Ingredients

Makes 16 muffins

  • 60 g. of butter
  • 50 g. sunflower oil
  • 120 g. white sugar
  • 50 g. brown sugar
  • 3 eggs
  • 1/2 tsp. vanilla extract
  • 240 ml. milk
  • 400 g. Of flour
  • 1,5 tsp yeast
  • 1 tsp. ground cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 tsp. of salt

For the frosting

  • 40 g. of butter
  • 130 g. icing sugar
  • 30 ml. hot water
  • 1/2 tsp. vanilla essence

Crafting

We mix in a bowl flour, cinnamon, nutmeg, salt and yeast; we reserve.

In another bowl, beat the sunflower oil and butter (at room temperature) together with the sugar (brown and white), until obtaining a fluffy and uniform dough. Then add the eggs one by one, mixing after each addition.

Add the flour mixture little by little and milk alternately, until the ingredients are finished and the dough is well mixed.

We pour the dough into the muffin molds, filling almost to the brim. Remember to put the paper molds in the steel ones to get a more beautiful shape.

We put in the oven, previously preheated to 220 degrees, and bake approximately 16-20 minutes, until the needle comes out clean.

We take the muffins out of the oven and leave them chill for 5 minutes on the tray, to later transfer them to a rack.

Lie we prepare our glaze. We melt the butter and heat the water. We gather all the ingredients in a bowl and beat until we get a smooth, uniform dough without lumps.

We glaze our cupcakes and we let them dry for about 10 minutes.
