Most of us are enjoying a few days of vacation; probably relatives. And I can't think of anything better to sweeten the snack than to prepare some simple muffins like these with cinnamon crumble. You need a little more than half an hour to prepare them, do you dare?

The muffin dough is a basic dough that is flavored in this case through the cinnamon crumble. What is the crumble? A sweet cake formed by a layer of fresh fruit covered by a mixture of flour, sugar and butter. This last mixture is the one we use today and we flavor with cinnamon.

Ingredients
  • For the muffins:
  • 200 g. all-purpose flour
  • 1¼ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon of salt
  • 75 g. butter, softened at room temperature
  • 150 g. white sugar
  • 1 L egg, at room temperature
  • 1 ½ teaspoon vanilla extract
  • 180 ml. sour cream *
  • For the sour cream.
  • 240 ml. cold liquid cream
  • 2 teaspoons lemon juice
  • 2 teaspoons of white vinegar
  • 1 pinch of salt
  • For the finish:
  • 100 g. all-purpose flour
  • 100 g. white sugar
  • 1 teaspoon ground cinnamon
  • 85 g. melted butter

Preparation
  1. We start by preparing the sour cream. To do this, we put the liquid cream in a bowl together with the lemon juice. We beat with a few rods until the lemon juice is integrated and the mixture thickens slightly. Then, we add the vinegar and salt and beat again until smooth.
  2. We preheat the oven at 190 ° C.
  3. In a bowl we mix the flour, sugar and cinnamon for finishing. Add the melted butter and mix with a fork until you get a kind of wet crumbs. We booked.
  4. In another bowl we sift the flour, the washing machine, the bicarbonate and salt. We booked.
  5. In a bowl, we beat the butter and sugar until a creamy and fluffy mixture is achieved. Next, we add the egg and beat again until integrated.
  6. We also add the vanilla and after this, half of the reserved dry ingredients. We mix to integrate and then we pour the sour cream. We beat again and finish integrating the rest of the dry ingredients.
  7. We distribute the dough into the muffin molds and sprinkle with the cinnamon topping.
  8. Bake 15-20 minutes or until toothpick comes out clean.
  9. Remove from the oven, let it warm for 5 minutes and place the muffinson a metal grill.
