Ingredients
  • 1 monkfish
  • Prawns or prawns 2-3 per person
  • 1 large cuttlefish
  • 1 cebolla
  • ½ kilo of tomato crushed or
  • 125 gr. fried tomato
  • 1 glass of white wine 150ml.
  • 3 slices of fried bread
  • 1 glass of broth (with monkfish bones)
  • 3 tablespoons of flour
  • Oil and salt

Preparation
  1. To prepare this monkfish dish with prawns in sauce, we will start by preparing a broth with the monkfish bones and the prawn heads. Put a little oil in a saucepan, sauté the prawn heads, add the monkfish bones and cover with water. Add a little salt, let it cook for about 20 minutes after it starts to boil. We turn off and reserve.
  2. We put a casserole with a little oil over high heat, we pass the prawns on both sides. We take out and reserve.
  3. We salt the monkfish, pass it through flour and brown it in the same pan with a little more oil. We take out and reserve. We sauté the cuttlefish cut into pieces and we also sauté it and take it out.
  4. We prepare the sauce, chop the onion and add it to the same pan where we have browned the fish, we can add a little more oil if necessary. We brown it a little and add the tomato, let it cook, I put the bread on one side to toast it and leave it with the sauce to mix.
  5. When we see that the sauce is, we add a little broth and grind it.
  6. Once it is crushed we add the white wine. We let the alcohol reduce for a couple of minutes.
  7. Add the cuttlefish, strain the broth and add 1-2 glasses of broth, let it cook for 10 minutes. Cuttlefish need a little more cooking.
  8. We add the monkfish to the casserole. We leave it for about 8-10 minutes. We taste the sauce for salt.
  9. When we see that the monkfish is to our liking, we put the prawns on top, turn off and cover the casserole and they finish cooking.
  10. And our monkfish casserole in sauce with prawns in sauce is ready.
