The mix of bio rice with tofu and vegetables is an exquisite dish that you will love. It may seem like a very elaborate recipe but it is a simple recipe with many vitamins.

Ingredients
  • 300 gr. mix of organically grown rice from the integral granary
  • 1 l. of water
  • 250 gr. whole grain granary tofu
  • 1 splash of soy sauce
  • 60 gr. of red pepper
  • 60 gr. green pepper
  • 60 gr. chive
  • 60 gr. zucchini
  • 8 broccoli sprigs
  • Carrots 2
  • 3 cloves of garlic
  • 1 tablespoon of virgin olive oil
  • 2 teaspoons of sugar
  • 3 teaspoons balsamic vinegar of modena
  • 1 or 2 well chopped cayenne
  • 200 gr. soy sauce
  • 100 gr. of water
  • 2 tablespoons cornstarch

Preparation
  1. The first thing we are going to do is press the tofu so that it releases as much water as possible. We take it out of the plastic and wrap it in a cloth or several sheets of kitchen paper. On top we put something that has weight (I put a plate and a jug of water on top). We leave it like that for about 20 minutes. We can skip this step but I personally like it much more.
  2. In a saucepan we put the rice with the water and salt and let it cook for 50 minutes.
  3. Let it cool and stir from time to time while it cools so it doesn't get caked.
  4. We cut the vegetables into julienne strips and steam them for 25 minutes. We can also cook them in water or in a wok. We make them steamed since the vegetables preserve many more vitamins.
  5. We cut the tofu into thin strips and fry it in a pan with a little oil. When it is done we add a splash of soy sauce to give it some flavor.
  6. In a saucepan, brown the garlic with the oil. When they are golden brown we add the sugar, the vinegar, the powdered cayenne, the soy sauce and the glass of water in which we will have dissolved the cornstarch. We let it simmer until the sauce has thickened a little.
  7. In a large skillet or small casserole we put the rice, vegetables, tofu and sauce and mix it and cook it for a couple of minutes or until it is hot.

Notes
You can cook tofu in three different ways:
- Fried in the pan with a little oil and brown it a little on each side.
- In the oven: you place it on greaseproof paper and leave it for 15 minutes on each side until it is golden brown. Here it is not necessary to add oil with what is the healthiest way.
- In a deep fryer, it is the fastest way.
If you have little time and you are in a hurry, you can substitute the sauce for soy sauce, it will also be very tasty.
