Mini potato omelette and sausages

The potato tortillas are very versatile, since they accept any type of vegetables or sausages. It is often made with onion, pepper and chorizo, the classic or Spanish tortilla. However, today we have opted for some mini sausage tortillas.

These mini tortillas are great for children's sandwiches when they go hiking. In this way, they fit perfectly in your sandwiches and are easy to transport in smaller tupers, in order to avoid carrying a lot of weight.

Ingredients

  • 3-4 medium potatoes.
  • 125 g of salami.
  • 4 eggs.
  • Olive oil.
  • Salt
  • Grated cheese.

Preparation

First of all, we will peel and we will cut the potatoes in small dice. We will wash them well under the tap of water and we will add salt to it. Later, we will fry them in a very hot pan with plenty of hot oil. We will drain on absorbent paper.

While we fry the potatoes, let's go cutting the sausageIn this case, I have used salami, but you can also use chorizo, salami, etc. Everything you want that gives it a lot of flavor.

In a deep plate, we will beat two whole eggs. To this we will add a little diced fried potato, some pieces of sausage and a little grated cheese. We will link well.

We will heat a mini non-stick skillet with a little olive oil and add the previous mixture. We will allow to curdle on one side and we will turn to curdle on the other.
