Any gadget that they give me for the kitchen makes me excited. Then I can't find where to keep them ... but that's another issue. This type of mini muffin tin is not something I would buy myself, but it must be recognized that the bite cupcakes they are ideal for presenting.
These mini blueberry muffins in a single bite they provide us with numerous flavors; that of honey, lemon and of course, blueberries. You can accompany them with a simple lemon glaze if you want to present yourself as a dessert or as a snack and surprise your loved ones. Shall we get down to business?
- 60 g. all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon ground cardamom
- ⅛ teaspoon of salt
- 4 tablespoons honey
- 4 tablespoons of butter at room temperature
- 1 egg
- 1 tablespoon of lemon juice
- ¼ cup fresh blueberries, chopped
- We grease the molds and we heat the oven to 180ºC.
- We mix the flour with yeast, cardamom and salt.
- In another container, we beat the butter and honey until a creamy mixture is achieved.
- Add the egg and beat again until it is integrated.
- Little by little, we incorporate the dry ingredients and then the lemon juice, stirring with a spoon or spatula.
- We also add the blueberries, mix and distribute the dough in the molds, filling up to ¾ of the cavity.
- We bake the muffins until a toothpick inserted comes out clean, about 15 minutes.
- We take them out of the oven, let them warm and unmold. We let them cool completely.
