Do you also usually prepare rice on the weekend? Personally, I really like sticky and soupy rice dishes, although I don't always prepare rice dishes of this type. Last weekend I bet on a rice with mushrooms and egg. Yes, I couldn't resist cooking some eggs in the microwave to top it off.

The rice with mushrooms that I propose today is very easy to prepare. Carry a fried onion and pepper important, but beyond that few more secrets it has. A "pastilla" of concentrated tomato and another of choricero pepper meat contribute to its flavor. And it is that, what a relief it is to have pills of this type and of which I speak below in the freezer.

At home a small boat that concentrated tomato or chorizo ​​pepper meat It would spoil open in the refrigerator before we could finish it. So what we do is use an ice tray to shape small single-dose tablets that we freeze and store in jars in the freezer; a trick learned from zero waste accounts.

Ingredients
  • 1 red onion
  • 1 green pepper
  • ½ red pepper
  • 2 tablespoons olive oil
  • 280 g. sliced ​​mushrooms
  • Salt and pepper
  • 1 teaspoon tomato paste
  • 1 teaspoon of chorizo ​​pepper meat
  • 1 cup of rice
  • 3 cups vegetable broth or hot water
  • 4 eggs

Preparation
  1. Finely chop the onion and peppers and sauté in a casserole for 10 minutes.
  2. Then add the mushroomsSeason with salt and pepper and fry for four more minutes, stirring frequently.
  3. We add the tomato, the chorizo ​​pepper and the rice and sauté for a couple of minutes, stirring constantly.
  4. Then we pour the boiling broth, Mix, cover and cook over medium/high heat for five minutes.
  5. After five minutes, lower the heat and we cook the rice 10-12 minutes more or until it is done.
  6. We remove from the fire and let rest placing a clean cloth on top.
  7. We take this moment to prepare some eggs in the microwave. To do this we take some cups or bowls, brush the bottom with a little oil, crack an egg in each one and cook them at maximum power, one by one, until we get the desired pint.
