Medlar pudding, seasonal fruit
To start the weekend with joy, being already vacations for some, I include myself, I have prepared this delicious medlar pudding. Desserts are a sin to keep up this summer, but a sweet doesn't kill anyone either so I hope you like it.
The puddings can be made with any kind of fruit And, there are two ways, one with stale bread and another taking advantage of the hard cake that we have left over, this is with cake.
Ingredients
- Leftover biscuits.
- Loquats.
- 500 ml of milk.
- 150 g of sugar.
- 4 whole eggs.
Preparation
This medlar pudding recipe is very easy and fastto be done, since just by preparing the cream and putting it in the oven it will be ready. Loquats, in summer, are very much in season, so here you have this delicious recipe.
First, we will put in a bowl the 4 eggs together with the sugar and we will beat it well until they double in volume. It is an operation to do it more quickly, if you have electric rods, if not, to make your biceps hard.
Then, we will add the milk little by little while stirring while also incorporating the pieces of sponge cake and, we will let it rest a little. While it rests, we peel and chop the medlars and we will also add it to this pudding base cream.
Now, a candy in the same mold that we will use for this dessert. We will add two spoons of sugar and a few drops of water, we will bring it to a low heat until it boils and takes on a light blond color.
When the candy is done, We will pour the base cream into the mold and we will put it in the oven for 45 minutes at 160ºC. To check if it is done, we will prick with a toothpick, and if it comes out clean it is, if not, we will leave it for another 5-10 minutes, until the toothpick comes out clean.
