Today we are going to cook some traditional meatballs in sauce with potatoes, but in this case we are going to make them much healthier by reducing fat. Cooking these types of dishes are a guaranteed guarantee since children love it. In addition, you can cook it in advance, which is very important considering the little time we have on a day-to-day basis.

If the smallest of the house reject the flavor of the sauce, you can leave their portion separate and at the last minute add a little tomato sauce. The added point of the baked potatoes gives this dish a delicious side dish as well as very healthy. Enjoy!

Ingredients
  • 500 gr of minced meat, a mixture of beef and pork
  • 1 large egg
  • 4 medium potatoes
  • Carrots 2
  • ½ onion
  • half a glass of white wine
  • 3 garlic
  • Parsley
  • Bread crumbs
  • Flour (XNUMXg)
  • Paprika
  • Extra virgin olive oil

Preparation
  1. First we have to season the minced meat, in a deep container we put the meat, the egg, the very minced garlic, parsley and salt.
  2. We mix all the ingredients well and add a little breadcrumbs.
  3. We stir carefully and add bread until the dough can be worked.
  4. Cover with a plastic wrap and reserve in the refrigerator for at least an hour.
  5. While we are preparing the sauce, in a wide casserole we put olive oil to heat.
  6. We cut the onion into cubes and add to the fire.
  7. Peel and cut the carrots and add to the pan.
  8. Add the sliced ​​garlic and sauté well.
  9. When the onion takes color, add a teaspoon of paprika and stir.
  10. We add the white wine and lower the heat.
  11. We let the alcohol reduce and add water, stir well and cook for about 20 minutes.
  12. After that time, we mash with a food processor and reserve.
  13. Now we are preparing the potatoes, peel them, wash them well and dry them with absorbent paper.
  14. We cut into not very thick slices, we prepare a source with baking paper and we place the potatoes.
  15. We add a tablespoon of oil and salt.
  16. We mix the potatoes well so that they are all impregnated with oil, we separate so that they do not cover each other.
  17. Bake at about 200 degrees for about 40 minutes, until golden brown.
  18. While the potatoes are being cooked, we are frying the meatballs.
  19. We are taking small portions with a spoon, we give a rounded shape and we flour.
  20. We prepare a frying pan with plenty of oil, heat and fry the meatballs.
  21. We remove the excess oil and place in the sauce.
  22. Once the potatoes are ready we have the dish ready.

Notes
You can leave the meatballs and sauce prepared the night before but in separate containers. When serving heat everything together.
